PROBLEM TO BE SOLVED: To obtain a frozen potato having an excellent palatability (chewiness) and flavor after blanching or freezing, suitably useful as a frozen raw material for various kinds of foods, especially for retort foods. SOLUTION: Cut potato of variety Sayaka is blanched on the condition that a browning cause enzyme is deactivated but a starch is not substantially pregelatinized and frozen to give the objective frozen potato.
