PROBLEM TO BE SOLVED: To provide a method for treating fish and shellfish meat or meat, capable of controlling to a minimum damage on/denaturation of the fish and shellfish meat or the meat and safely decreasing the number of germ of the fish and shellfish meat or the meat without influencing flavor inherent in fish and shellfish meat or meat and using chemicals. SOLUTION: This method for treating frozen fish and shellfish meat or frozen meat comprises heat-treating the surface of the frozen fish and shellfish meat or the frozen meat with superheated steam at =100 deg.C.
