PURPOSE: Provided is a production method of noodles by using spaghetti pumpkin. Therefore, the noodle contains savory taste peculiar to and nutrients contained in spaghetti pumpkin. CONSTITUTION: The production process of noodles using spaghetti pumpkin is characterized by comprising the steps of: mixing 60-70 wt.% of wheat flour, 15-30 wt.% of sweet potato starch or wheat starch, 5-15 wt.% of spaghetti pumpkin powder1-10 wt.% of liquid obtained by boiling spaghetti pumpkin then kneading the mixture; and forming noodle strips then followed by packing and rapid-freezing at -30 to 145 deg.C them.
