The invention concerns a method for continuous production of citrus fruit extracts rich in soluble pectins, which consists in: eliminating the outer part of the peel consisting of the zest; heating the core citrus at a temperature less than 110 DEG C; subjecting in less than three seconds, the heated citrus fruit to a reduced pressure; finally, treating the resulting product so as to produce an extract more or less rich in pulp.
