PROBLEM TO BE SOLVED: To provide a new xyloglucan oligosaccharide-degrading enzyme having a degradation style different from those of known enzymes.;SOLUTION: This method for producing the enzyme comprises collecting from a microorganism belonging to the genus Geotrichum the enzyme specifically degrading the second β-glucoside bond from the reducing terminal among β-glucoside bonds constituting the main chain of the xyloglucan oligosaccharide, clarifying the amino acid sequence and gene base sequence of the enzyme, and then highly purely producing a polypeptide having the enzyme activity at a low cost by a genetic engineering means.;COPYRIGHT: (C)2003,JPO
