PROBLEM TO BE SOLVED: To provide a discoloration inhibitor having safety and economy, effectively inhibiting discoloration of food and drink by utilizing a healthy material and enhancing the active oxygen erasing power, an active oxygen eraser, a discoloration inhibiting method using these agents, and a method for enhancing the active oxygen erasing power. SOLUTION: Nigero-oligosaccharide is used as the active component of the discoloration inhibitor and the active oxygen eraser, and 0.2-30 wt.% of this is added to enhance the discoloration inhibiting and the active oxygen erasing powers of the food and drink.
