PROBLEM TO BE SOLVED: To obtain a germinated unpolished rice rich in essential amino acids from a germinated unhulled rice produced by efficiently germinating an unhulled rice while preventing the generation of undesirable odor.;SOLUTION: The production method contains a step comprising the primary roasting of unhulled rice germinated by immersing in running water to effect the thermal sterilization, the inactivation of enzymatic action and metabolic action and the gelatinization of starch and a step to thresh the germinated rice after the adjustment of water content to obtain the germinated unhulled rice.;COPYRIGHT: (C)2003,JPO
