PROBLEM TO BE SOLVED: To devise the reduction of stinks by-produced on the production of germinated unpolished rice, the improvement of germination rate, and the shortage of a time required for the germination.;SOLUTION: This method for producing the germinated unpolished rice comprises heating and immersing unpolished rice in water to absorb the water in a short time and then treating the treated unpolished rice with steam to germinate the unpolished rice. Preferably, the method for producing the germinated unpolished rice comprises a process for introducing steam from a boiler 4 into a space between an inner vessel 6 and an outer vessel 3 to heat the inner vessel 6 receiving the unpolished rice and water, thereby heating and making the unpolished rice to absorb the water, and a process for transferring the water-absorbed unpolished rice into the outer vessel 3 to germinate the unpolished rice by the action of the steam from the boiler 4.;COPYRIGHT: (C)2005,JPO&NCIPI
