PURPOSE: Provided is a manufacturing method of a refined alcoholic drink of Fagopyrum esculentum Moench. The manufactured refined alcoholic drink has improved alcohol content and an excellent taste and flavor. CONSTITUTION: The manufacturing method of a refined alcoholic drink of Fagopyrum esculentum Moench comprises the steps of: steaming rice to prepare hard boiled rice; steaming dehulled or whole Fagopyrum esculentum Moench to prepared hard boiled Fagopyrum esculentum Moench; mixing the hard boiled rice and Fagopyrum esculentum Moench with Fagopyrum esculentum Moench, malt, yeast and purified water then fermenting the mixture to give crude alcohol of Fagopyrum esculentum Moench; adding hard boiled Fagopyrum esculentum Moench or Fagopyrum esculentum Moench, yeast, malt and purified water to the crude alcohol of Fagopyrum esculentum Moench; maturing and filtering the mixture to give the refined alcohol drink of Fagopyrum esculentum Moench.
