PURPOSE: A soup base containing ginseng powder used for instant noodle products is provided, which maintains the functionalities and unique flavor of the ginseng with removed bitter taste by cyclodextrin mixed with the ginseng powder. CONSTITUTION: The soup base for instant noodles is prepared by the steps of : (i) grinding green ginseng with water in a ratio of 1:4-6 and filtrating the ground green ginseng to get a green ginseng solution ; (ii) including functional and nutritive ingredients of the ginseng in cyclodextrin by mixing the ground ginseng solution and the cyclodextrin in a ratio of 1:1-2 and stirring the mixture ; (iii) and then adding 1-40wt% of the inclusion compound to a soup base of instant noodle. The inclusion compound can also be lyophilized, pulverized and frozen to be added to the soup base.
