PROBLEM TO BE SOLVED: To provide a method for producing Miso (fermented soybean paste) flavored oil and fat having strong flavor of Miso and feeling of Miso taste with cooking feeling, to provide powdery oil and fat excellent in fluidity, quickly melting when added to hot water and having favorable appearance and flavor as soup, and to provide a method for producing the powdery oil and fat.;SOLUTION: This method for producing the Miso component-containing oil and fat comprises a process of mixing a fiber-containing solid matter and oil and fat with Miso, a process of heating the mixture thus obtained and a process of removing residue from the heated mixture to collect an oil phase. The method for producing the powdery oil and fat comprises cutting mass-like oil and fat obtained by including the Miso component in oil and fat with a rising fusing point of 40-60°C and solidifying the product.;COPYRIGHT: (C)2004,JPO
