PROBLEM TO BE SOLVED: To provide a powdery oil and fat, which shows satisfactory dispersibility in water while having satisfactory flow property of powder and never causes separation and floating of oil and fat on the liquid surface when added and dispersed to water or a solution mainly composed of water, and the most part of ingredients of which is composed of a functional component.SOLUTION: A method 1 for producing a powdery oil and fat includes: adding collagen to water as a diluent to prepare a dispersion liquid (step S11); adding oil and fat to the dispersion liquid (step S12) followed by mixing to make an emulsified liquid (step S13); and drying and powderizing the emulsified liquid (step S14).
