PROBLEM TO BE SOLVED: To produce a soybean paste, by using soybean curd lees the most portion of which is conventionally thrown away as a raw material, so as to effectively utilize the soybean curd lees.;SOLUTION: A soybean curd lees paste is formed by rapidly hydrating and milling the soybean curd lees from which soybean milk is separated, or by boiling and washing the lees, then subjecting to deodorizing treatment, and further hydrating, milling, and controlling a water content of the lees, so that the soybean curd lees paste is formed out of fine particles (having a particle size of 30-40 μm). The soybean paste is produced by using the soybean curd lees paste as the raw material instead of soybean.;COPYRIGHT: (C)2004,JPO
