PROBLEM TO BE SOLVED: To provide a chlorophyl beverage capable of preserving efficiently extracted chlorophyl while keeping the freshness; and to provide a method for producing the beverage.;SOLUTION: The chlorophyl beverage is obtained by emulsifying a chlorophyl-containing material 17 containing not only the chlorophyl extracted from a raw material 10 consisting essentially of leftovers from sericulture, but also an oil and fat component and a protein, in clean water 19. The method for producing the beverage comprises an extraction step 13 for subjecting the raw material 10 consisting essentially of the leftovers from the sericulture to ultrasonic treatment so as to be dissolved in volatile ethyl alcohol 12, and extraction-treating the chlorophyl-containing material 17 containing not only the chlorophyl but also the oil and fat component and the protein, a separation step for separating a residue 14 from the liquid treated at the extraction step 13, and separating the chlorophyl-containing material 17 by vaporizing and removing the ethyl alcohol 12, and a step for mixing the chlorophyl-containing material 17 obtained at the separation step with the clear water 19, and carrying out the ultrasonic emulsification treatment of the product.;COPYRIGHT: (C)2004,JPO
