PROBLEM TO BE SOLVED: To enable production of light type refined rice wine in which alcohol content, Baume degree, acidity and amino acidity are designed by using an excellent concentrated rice-saccharified material. SOLUTION: Water is mixed with koji and the koji is dissolved in water for about 1 hr at about 53 deg.C to 60 deg.C and steamed rice is added to the aqueous solution to saccharify the rice and produce excellent concentrated rice- saccharified material made from koji and steamed rice, and then, light type refined rice wine is produced by the concentrated rice saccharified material.
