Method for determination of chitinase activity based on the use of fluorescent substrates.; The method comprises incubating a sample of an enzyme with chitinase activity, or a preparation containing said enzyme with chitinase activity, in the presence of an appropriate substrate for said enzyme, said substrate labeled with a fluorochrome being under conditions which form the reaction products catalyzed by said chitinase activity, and measuring the fluorescence emission.
