Process for preparing succinylated gelatin

PURPOSE: Provided is a method of manufacturing succinylated gelatin which substitutes the amino group(-NH3+) with carboxyl(-COOH) to prevent the aldehyde and ketonization reaction with respect to specific medical treatments. CONSTITUTION: The method of manufacturing succinylated gelatin comprises the steps of: pre-treating hide splits, pig skin and dried ossein and fishes by alkali treatment, acid treatment, and alkali and acid treatment; extracting gelatin from the pre-treated materials; controlling the pH of the extracted gelatin solution to be 7.0-8.0 with an aqueous solution of sodium hydroxide, and adding succinic anhydride thereto, followed by performing condensation reaction thereto to form a succinylated gelatin solution; and filtering, concentrating and drying it.
