PPROBLEM TO BE SOLVED: To develop a technique for early predicting of the discoloration timing of beef in a fresh stage thereof, by measuring the antioxidation ability. PSOLUTION: In this method of predicting the meat color maintaining days of the beef by measuring the antioxidation ability, the content of minced meat in a piece of muscle collected from a beef sample x is found using an antioxidation ability measuring kit that is substituted in a regression expression as follows, and the discoloration timing y of the beef sample under a normal storage condition is predicted thereby.
