PROBLEM TO BE SOLVED: To develop a technique for predicting early a meat color maintaining days for beef at a fresh stage thereof, based on a discoloration rate by rapid oxidation of the beef.;SOLUTION: In this method of predicting meat color maintaining days of the beef, based on the discoloration rate by the rapid oxidation, the ratio of metmyoglobin in a piece of muscle is measured along with the lapse of time under a temperature condition that is higher than the ambient temperature, in the muscle collected from a beef sample. and a time x, when the ratio reaches 30% is found to be substituted in a regression expression as follows, and the discoloration timing y of the beef sample under a usual storage condition is predicted thereby.
