This relates to a Sunflower Oil directly obtained from sunflower seeds with at least 12% of Stearic acid with reference to the total content of fatty acids wherein the Alpha coefficient distribution of fatty acids between the positions sn-1 and SN - 3 and S of at least 0,38 and a Sunflower Oil directly obtained from sunflower seeds with at least 12% of Stearic acid with reference to the total Fatty Acid content, wherein the Alpha coefficient distribution of fatty acids between the positions and SN1 - SN - 3 is at least 0.2 8 when the content of oleic acid is higher than the content of linoleic acid in the Oil.
