A process for making a meat sausage, comprising the following steps: introducing a core of meat (1) from an extruder of meat (7) through a funnel (8) around which a wrapping tripe (2 ) it is attached and which is of an elongated rectangular cross section, whose length is about five times its width, subjecting the sausage product immediately after its extrusion from the funnel (8) to pressure by two platforms or roller belts (11, 11 ¿) immediately close to the funnel (8) and spaced in a parallel arrangement or with a slight divergence towards the funnel (8) to counteract its tendency to assume a cylindrical configuration under the influence of pressure of the meat inside the shell casing (2), and storing sausage pieces (16) of the sausage product obtained thereby in horizontal or vertical disposition upon supports so that are spaced to leave substantially all their outer surfaces free for airing while they are subjected to some pressure to facilitate their volumetric contraction during dehydration thereof.
