The process for obtaining degraded vegetable gum comprises the steps of providing a suspension of vegetable gum in an aqueous alcoholic solution having an alcohol concentration ranging between 56 ° and 73 °, at a temperature within a range between 15 and 28 ° C; Adjusting the pH of the suspension to a value comprised between 7 and 14 by adding a basic agent, the temperature and the total alcohol concentration being maintained in said ranges; Allowing the suspension to stand at said conditions for a period of between 2 and 24 hours to degrade the vegetable gum; Adjusting the pH of the suspension to a value in a range between 4 and 6 by adding an acidic agent and separating the degraded vegetable gum from the suspension.
