The process for obtaining degraded vegetable gum comprises the following phases: providing an aqueous solution of a vegetable gum at a temperature ranging between 0 and 80 ° C, the solution further containing an enzyme selected from the group consisting of consisting of galactomannanase, pectinase, cellulase, hemicellulase and mixtures thereof; Allowing the solution to stand at said conditions for between 8 and 18 hours to degrade the vegetable gum; and separating the degraded vegetable gum from the solution.
