PROBLEM TO BE SOLVED: To provide a method for producing fermented sprouted brown rice having palate feeling of the same level compared to refined rice, suitable for taste and enabling intake of great benefits of fermented sprouted brown rice.;SOLUTION: This method for producing the fermented sprouted brown rice comprises a sterilization process of sterilizing sprouted brown rice, a mixing process of mixing Aspergillus oryzae with the sterilized sprouted brown rice, a fermentation process of fermenting the sprouted brown rice with Aspergillus oryzae and a drying process of drying the fermented sprouted brown rice. The fermentation is performed to an extent allowing the fermented sprouted brown rice to have when boiling hardness of the same level as that of refined rice when boiling.;COPYRIGHT: (C)2007,JPO&INPIT
