PROBLEM TO BE SOLVED: To obtain a highly active raffinose synthase capable of synthesizing raffinose which has Bacillus bifidus proliferative activity and is therefore useful for food materials and organ storage liquids. SOLUTION: This raffinose synthase is afforded by Cucumis plants such as Cucumis melo or Cucumis sativas, having the following characteristics (1) capable of producing raffinose from sucrose and galactinol; (2) optimum pH is about 6-8, and cotimum temperature about at 35-40 deg.C; (3) molecular weight is about 75-95kDa (gel permeation chromatography) or about 90-100kDa (SDS- PAGE, Native PAGE); and (4) containing respective amino acid sequences of formula I to formula III in its amino acid sequence.
