PPROBLEM TO BE SOLVED: To provide a method of efficiently producing raffinose through identifying raffinose synthetase. PSOLUTION: Raffinose is produced by applying, to sucrose and galactinol, a raffinose synthetase having the following characteristics: (1) ability and substrate specificity that raffinose is produced from sucrose and galactinol; (2) an optimum pH of about 6 to 8; (3) an optimum temperature of about 35 to 40C; (4) molecular weight of: (i) about 75 to 95 kDa measured by gel filtration chromatography; (ii) about 90 to 100 kDa measured by polyacrylamide gel electrophoresis (Native PAGE); (iii) about 90 to 100 kDa measured by SDS-polyacrylamide gel electrophoresis (SDS-PAGE) under reductive conditions; (5) inhibitory susceptibility that is inhibited by iodoacetamide, N-ethylmaleimide and myoinositol.
