Provided are a kimchi refrigerator, an apparatus for controlling the fermentation of cheonggukjang (thick soybean paste), and a method for fermenting cheonggukjang under the desired various fermentation condition. The kimchi refrigerator comprises a main body(3); a storage room(33) whose accommodation space is formed in the inside the main body; an inner case(13a,13b,13c,13d) which is installed to be separated from the storage room and is made of a foaming material(31); a heat exchange part which heats or cools the outer circumference of the inner case; a control part which controls the operation temperature and the operation time of the heat exchange part to allow cheonggukjang to be fermented in the storage room under the various fermentation conditions; and a display which is connected with the control part to display the fermentation condition.
