A method of manufacturing rape seed oil having excellent oxidative stability and a rich color tone by subjecting roasted rape seed(Brassica napus L.) to a super critical carbon dioxide CO2 extraction is provided. The method increases the extraction efficiency of antioxidant components such as tocopherol and minimizes the extraction of chlorophyll and thus produces rape seed oil having a low content of chlorophyll and low quality deterioration such as lipid rancidity for a long-term storage. Rape seed is roasted at 150 to 250deg.C and ground. The ground rape seed is subjected to a super critical carbon dioxide CO2 extraction at 60 to 80deg.C and 450 to 800 bars by the addition of supercritical carbon dioxide. After the separation of carbon dioxide from the oil and supercritical carbon dioxide mixture, the separated extraction oil is purified to produce rape seed oil containing a tocopherol content of more than 960mg/L and a chlorophyll content of less than 1.5ppm.
