PROBLEM TO BE SOLVED: To provide a method for producing a high-quality yeast fermented food excellent in the preservability of dough under freezing or refrigerating conditions.;SOLUTION: The method for producing frozen or refrigerated dough for yeast fermented food comprises adding water to a bakery stock to prepare dough whose water content is adjusted to 15-35 wt.%, subjecting the dough to high-speed mixing followed by freezing or refrigerating the resultant dough.
