A composition containing soy protein comprising from 98.5% (by weight on dry basis) to 99.5% (by weight on dry basis) of precipitated soy protein tofu and 0.5% (by weight on dry base) 1.5% (by weight on dry basis) of lecithin, in which the precipitated soy protein tofu comprises between 65% (by weight of tofu) and 85% (by weight of tofu) of Soy protein, between 10% (by weight of tofu) and 20% (by weight of tofu) of carbohydrates, between 0.5% (by weight of tofu) and 2.0% (by weight of tofu ) of fat, between 3% (by weight of tofu) and 8% (by weight of tofu) of ash, and between 1% (by weight of tofu) and 10% (by weight of tofu) of moisture , and in which the lecithin has an HLB value between 4 and 10.
