Method for the preparation of a meat substitute product comprising protein, where: 1) a protein material is added, a hydrocolloid that precipitates with metal cations and water to each other, 2) the composition of phase 1 is formed ) in a homogeneous mixture, 3) the mixture of 2) is mixed while stirring with a solution of a metal cation with a valence equal to or greater than 2, to form a fibrous product, 4) the fibrous product, characterized by the fact that 5) the protein material comprises a milk protein material selected from the group consisting of: milk powder, alkali metal caseinate of whey protein and ammonium caseinate, 6) the method is performed in the absence of a phosphate material, and 7) the solution of a metal cation with a valence equal to or greater than 2 is gradually added to the homogeneous mixture while stirring.
