Nucleic acid molecules encoding a protein having the enzymatic activity of a fructosyl transferase (FFT) leading to the synthesis of polymers fructan high-molecular, whose molecules contain on average more than 20 fructosyl residues, selected from the group consisting of: (a) nucleic acid molecules encoding a protein comprising the amino acid sequence shown in SEQ ID No. 2 and SEQ ID No. 4; (B) nucleic acid molecules comprising the nucleotide sequence indicated under SEQ ID No. 1 or SEQ ID No. 3 or a corresponding ribonucleotide sequence; (C) nucleic acid molecules comprising a nucleotide sequence that is at least 80% to the coding sequence shown in SEQ ID No. 1; (D) nucleic acid molecules encoding a protein comprising an amino acid sequence that is at least 85% to the amino acid sequence of SEQ ID No. 2; and (e) nucleic acid molecules comprising a fragment of the nucleotide sequence of (a), (b), (c) or (d).
