DUCK YOLK LECITHIN COMPOSITION HAVING ANTIOXIDANT AND ANTICHOLESTEROL ACTIVITY

A duck yolk lecithin composition is provided to secure stability and storage capability, improve antioxidant and anti-cholesterol activities by adding chitosan and vitamin C to the duck yolk lecithin. A duck yolk lecithin composition having antioxidant effects comprises 99-99.65wt% of duck yolk lecithin, 0.05-0.2wt% of chitosan and 0.3-0.8wt% of vitamin C. The duck yolk lecithin composition having anti-cholesterol effects contains 99-99.65wt% of duck yolk lecithin, 0.05-0.2wt% of chitosan and 0.3-0.8wt% of vitamin C. The duck yolk lecithin ensures stability, storage capability, antioxidant effect and anti-cholesterol activities.
