A method for preparing a red yeast rice and a red yeast rice prepared by the same are provided to suppress a cholesterol level without liver damage and kidney damage. In a method for preparing a red yeast rice and a red yeast rice, the rice is put into a culture bag and solid medium is manufactured. A strains of the genus Monascus is inoculated with a solid medium and it is cultivated. The cultivation is performed for a first period under a first temperature and for a second period under a second temperature. In manufacturing cultivation envelope solid medium, the rice less than 1kg is put into the culture bag and it is increased. The first temperature is 31‹C, and the second temperature is 28‹C.
