A method of manufacturing a composition containing rice bran as a main is provided to prevent the destruction of nutrients and beneficial components during processing and to obtain antioxidants of food additives and health supplementary food for inhibiting acidification of food. A rice bran composition is prepared by mixing 65 to 70% by weight of a composition containing 80 to 85% by weight of rice bran, 14.6 to 19.5% by weight of sugar and 0.4 to 0.5% by weight of fermented oil and 30 to 35% by weight of ground garlic and fermenting at 5 to 6deg.C for 3 to 4 days. Instead of the ground garlic, ginseng powder, fruit juice, olive oil and onions are mixed.
