The invention relates to a method for producing a valuable product, in particular starch and / or protein, from flour from cereal grains, in which I) flour is kneaded with fresh or process water into dough; II) the dough is divided into at least two fractions, in particular, under the action of centrifugal forces: into a heavy fraction of primary starch, a fraction of protein and secondary starch (phase discharged through the decanter nozzles), and a fraction of pentosan; III) biogas is obtained from the obtained fractions, which is used for energy production; and iv) wherein the fraction used to produce biogas is subjected to at least one liquefaction (505) and phase separation (506) operation, wherein the biogas is obtained from the liquid phase of the separated phases (506).
