PURPOSE: A method for manufacturing chopped noodles(kalguksu) is provided to have a chewy taste and to obtain the unique taste and nutrients of gardenia fruits by mixing a gardenia yellow colorant, which is extracted from the gardenia fruits, with wheat flour.;CONSTITUTION: A method for manufacturing chopped noodles(kalguks) comprises the following steps: inoculating microorganisms of Penicillium and Trichoderma in a culture medium in which gardenia crushed materials or their extract is added and culturing the microorganisms at 20-40°C and a condition of pH 4-10 for 5-7 days; mixing the gardenia extract with 1kg of pulverized wheat flour and solidifying pasted noodles by mixing 250g of water using a drier.;COPYRIGHT KIPO 2011
