PROBLEM TO BE SOLVED: To provide a Saccharomyces cerevisiae mutant having a high content of sulfur-containing compound such as glutathione, a method for producing yeast highly containing a sulfur-containing compound by using the mutant, a culture of the mutant, a culture extract and a food and beverage containing a sulfur-containing compound.;SOLUTION: The Saccharomyces cerevisiae mutant having a ≥2 wt.% sulfur-containing compound content per dried cell weight is obtained by (a) a step of mutating Saccharomyces cerevisiae YNN27 to give a yeast mutant having a mutant MET30 gene, (b) a step of mutating the yeast mutant obtained by the step (a) to give two or more yeast mutants having the mutant MET30 gene and a ≥1.5 wt.% sulfur-containing compound content per dried cell weight and (c) a step of crossing two mutants of the yeast mutants obtained by the step (b) to give a yeast mutant having a ≥2 wt.% sulfur-containing compound content per dried cell weight.;COPYRIGHT: (C)2011,JPO&INPIT
