COMPOSITION OF HYDRATED AND CRUTED PROTEIN, RESTRUCTURED MEAT PRODUCT, VEGETABLE PRODUCT AND FRUIT BASED PRODUCT The present invention relates to a protein-containing composition comprising; a protein composition, wherein at least about 75% by weight of the protein composition contains at least about 15% by weight of large fragments consisting of protein fibers at least about 4 centimeters long, protein filaments of At least about 3 inches long and protein chunks of at least about 2 inches long and at least about 75% by weight of the protein composition have a shear strength of at least 1400 grams. The invention also relates to a process for producing the protein composition. The invention also relates to a restructured meat product, or a vegetable product, or a fruit product comprising; a vegetable protein composition, minced meat, or minced vegetables, or minced fruits respectively, and water, wherein at least about 75% by weight of the protein composition contains at least about 15% by weight of large fiber-containing fragments of protein at least about 4 inches long, protein filaments at least about 3 inches long and pieces of protein at least about 2 inches long and at least about 75% by weight of the protein. Protein composition has a shear strength of about 1400 grams. In another example, the invention describes the process for producing the meat product, or vegetable product, or fruit product, respectively.
