PURPOSE: A method for manufacturing persimmon Makkoli is provided to suppress browning and to improve persimmon processibility. CONSTITUTION: A method for manufacturing persimmon Makkoli comprises: a step of adding purified water to white-koji mould and yeast and prepare white-koji; a step of adding hard-boiled rice and purified water to white-koji and fermenting; a step of sieving to prepare Makkoli; and a step of adding persimmon extract and pretreated persimmon and sterilizing. The persimmon extract contains 1-5 wt% of ascorbic acid.
