Manufacturing method of Bibimbap edible in space environment using irradiation technology

摘要

PURPOSE: A manufacturing method for boiled rice with assorted mixtures is provided to store the boiled rice with the assorted mixtures for a long time using a radiant ray irradiation technique. CONSTITUTION: A manufacturing method for boiled rice with assorted mixtures comprises the following steps: soaking rice into water including an expanding agent to make boiled rice; heating a hot pepper sauce; mixing the boiled rice with the hot pepper sauce to make the boiled rice with the assorted mixtures; and freeze-drying the boiled rice with the assorted mixtures, packing, freezing, and irradiating radiant rays. The moisture content of the rice is 10~20wt%.
