PURPOSE: A manufacturing method for buckwheat noodles using buckwheat flour and an apparatus thereof are provided to prevent nongelatinization, failures of noodle strings, thickness difference, agglomeration of strips, lack of glass and property of matter shortage etc. CONSTITUTION: A manufacturing method for buckwheat noodles using buckwheat flour comprises the following step: kneading raw buckwheat powder having the viscosity of 150~200RVU with water(S10); extruding the dough; cooling the extruded noodles; kneading the raw buckwheat powder with 0.5~1.5 weight% of saline and 1~2 weight% of ethanol. The moisture content of the dough is 40~44%. The number of extrusion holes of an apparatus is 310~340.
