Procedure for the detection of adulterations in olive oils with seed oils (soy and sunflower) based on the determination of trigonelline by Capillary Electrophoresis. # The aim of the invention is the development of an analytical procedure by Capillary Electrophoresis with UV detection that allows determine the non-protein amino acid trigonelline in seeds (sunflower and soy) and in its oils and investigate its presence in olives and olive oils. The presence of this amino acid in sunflower and soybean seeds and in their oils allows establishing an oil-seed traceability ratio. The absence of trigonelline in olives (Picual, Hojiblanca and Arbequina) and its oils allows us to propose this amino acid as a novel marker for the detection of adulteration of virgin olive oils with seed oils (sunflower and soybean). # The invention consists in the separation Trigonelline electrophoretics of the rest of the sample components using an acid medium such as ammonium formate buffer at pH 2.0 and a direct UV detection at 195 nm.
