PURPOSE: A producing method of stuffing of Chinese stuffed pancake using sweet potato is provided to minimize the damage and degeneration of fibrous components in the sweet potato. CONSTITUTION: A producing method of stuffing of Chinese stuffed pancake using sweet potato comprises the following steps: washing sweet potato; peeling the sweet potato, and dipping in a 5% sugar solution for preventing color change(ST1); steaming the sweet potato at 100-120deg C for 10-30minutes(ST2); crushing the sweet potato, and mixing with sugar, starch syrup, refined salt, and cinnamon powder(ST3,ST4); and vacuum-concentrating the mixture for 20-30minutes(ST5).
