FIELD: food industry.;SUBSTANCE: method involves broth expression from preliminarily milled initial raw material. Produced press cake undergoes two-stage drying. At each stage the press cake drying is performed simultaneously with its stirring with heated inert bodies made of a heat capacity material and loaded simultaneously with the milled initial raw material in an amount of 10…20% of the latter weight. During the second drying stage the gasiform heat carrier supply rate exceeds the gasiform heat carrier supply rate at the first stage. Coarse and moist press cake particles with inert bodies separated at each drying stage are returned for reprocessing. The installation contains an auger-press the loading bin whereof is connected to the source of milled initial raw material supply, a vertical auger-conveyor with a nipple for discharge of evaporated moisture and a nipple for cake press output, a two-stage drier with flowing supply of heated gasiform heat carrier from the flow booster, a coarse and moist particle separator and a cyclone for separation of ready flour from the gasiform heat carrier. Additionally the installation contains an accumulator with inert bodies the output whereof is connected to the loading bin of the auger-press.;EFFECT: invention ensures energy expenditures reduction and enhancement of operational reliability of the installation.;3 cl, 5 dwg
