PROBLEM TO BE SOLVED: To provide a food that can be manufactured by a simple method using a whole root vegetable containing many useful components in terms of health but not being fully used.;SOLUTION: A root vegetable processed food 10 is manufactured by using an unpeeled material root vegetable 1 and conducting one or more processing processes P including a steaming process S1 followed by a drying process S2. The physical property of the root vegetable processed food 10 is adjusted and the components contained are condensed by conducting the processing processes P twice or more.
