PROBLEM TO BE SOLVED: To provide a method for producing processed root vegetables comprising frozen root vegetables: and to provide a product obtained by the method.;SOLUTION: The method for producing frozen root vegetables comprises freezing cut root vegetables while skipping blanching, then subjecting the obtained frozen root vegetables to freezing and tissue-strengthening treatment followed by storing the frozen and tissue-strengthened root vegetables for a prescribed period of time under the condition free from extreme deterioration in quality so as to improve breakage strength. Cut vegetables is processed by the method. Food partly contains the cut root vegetables as part of food materials. A method for producing cooked food containing the root vegetables is provided.
