PROBLEM TO BE SOLVED: To provide a method for producing a hard candy, by which the hard candy enabling the simultaneous taste of flavor peculiar to a fruit and/or a vegetable and the flavor of the hard candy can be mass-produced while keeping high quality.;SOLUTION: The method for producing the fruit and/or vegetable-containing hard candy includes: inserting the dry fruit and/or dry vegetable of main raw materials to a twin-screw extruder having screws with groove widths larger than the maximum diameter of the main raw materials at an input port by a rotation-type or vibration-type feeder to provide a processing dough; quantitatively extruding the resultant dough into a separately produced hard candy dough to provide a dough; forming the resultant dough into a rope shape in the state as it is; cutting the formed product while moving the formed product along a shape-keeping stand having a groove the size of which is nearly equal to the diameter of the formed product by a rotary blade or a vibration blade into small fragments so that the ratio of the surface areas of the processing dough to the hard candy dough may be 1:20 to 5:1; and heating the cut product on a transportation conveyor by a warm-air generator or infrared rays to smoothen the edge of the candy formed upon cutting.;COPYRIGHT: (C)2013,JPO&INPIT
