PROBLEM TO BE SOLVED: To provide yams and a method for producing the yams that can maintain tastiness, a raw texture and flavor even after preserved in a peeled state for a long period of time and that are not discolored for 2 or 3 hours after opened.;SOLUTION: The method for producing the peeled yams of excellent preservability is carried out by treating the yams through the following steps of: (1) washing with water, (2) bringing the yams into contact with a sodium hypochlorite solution, (3) peeling, (4) bringing the yams into contact with a sodium hypochlorite solution or a calcinated calcium solution, (5) bringing the yams into contact with a freshness holding solution that contains lactic acid, catechins, procyanidins, L-ascorbic acid and organic acid in water, and (6) washing with water.;COPYRIGHT: (C)2013,JPO&INPIT
