PROBLEM TO BE SOLVED: To provide a production method of a fruit juice fermentation beverage in which even when preserved for at least a fixed period, browning by coloration and lowering of quality of taste are suppressed to the minimum; and a coloration prediction method in preservation time of a fruit juice fermentation beverage.;SOLUTION: Provided is a production method of a fruit juice fermentation beverage in which a concentrated fruit juice is used. The production method of a fruit juice fermentation beverage includes: a concentrated fruit juice selection process in which a content of 5-hydroxymethyl furfural (5HMF) in a concentrated fruit juice is measured, and a concentrated fruit juice that is used for fermentation is selected based on a content of 5HMF; and a fermentation process in which the selected concentrated fruit juice is used, and the fruit juice is fermented.;COPYRIGHT: (C)2014,JPO&INPIT
